2-3 tablespoons olive oil
Salt (to taste)
Black pepper (to taste)
Paprika (optional)
Finely chopped fresh herbs (optional, like rosemary or thyme)
Grated cheese (optional)
Sour cream or your favorite dipping sauce (optional)
4 large potatoes
