Roasted Vegetables

Roasted vegetables are a simple and flavorful dish that can be enjoyed on its own or as a side dish. Here’s a basic recipe that you can customize based on your preferences and the vegetables you have on hand:

Ingredients:

  • Assorted vegetables (e.g., carrots, bell peppers, zucchini, cherry tomatoes, broccoli, cauliflower, sweet potatoes, etc.)
  • Olive oil
  • Salt and pepper
  • Optional seasonings: garlic powder, onion powder, dried herbs (rosemary, thyme, oregano), paprika, cumin, etc.

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Vegetables:
    • Wash and peel (if necessary) the vegetables. Cut them into bite-sized pieces for even cooking.
  3. Toss with Olive Oil:
    • Place the prepared vegetables in a large bowl.
    • Drizzle olive oil over the vegetables, ensuring they are well-coated. Toss the vegetables to coat them evenly with the oil.
  4. Season:
    • Sprinkle salt and pepper over the vegetables. Add any additional seasonings or herbs based on your preference.
  5. Spread on Baking Sheet:
    • Arrange the seasoned vegetables in a single layer on a baking sheet. Use parchment paper or lightly grease the baking sheet to prevent sticking.
  6. Roast in the Oven:
    • Place the baking sheet in the preheated oven and roast the vegetables for 20-30 minutes, or until they are tender and have golden edges. Stir or toss the vegetables halfway through the cooking time for even roasting.
  7. Check for Doneness:
    • The cooking time may vary depending on the size of the vegetable pieces and your oven, so check for doneness by inserting a fork or knife into the vegetables. They should be tender but not mushy.
  8. Serve:
    • Once the vegetables are roasted to your liking, remove them from the oven and let them cool slightly before serving.
  9. Optional Additions:
    • You can add extras like grated Parmesan cheese, a squeeze of lemon juice, or fresh herbs after roasting for added flavor.
  10. Enjoy:
    • Serve the roasted vegetables as a side dish or incorporate them into salads, wraps, or bowls.

Feel free to experiment with different vegetable combinations and seasonings to create a variety of roasted vegetable dishes. It’s a versatile and nutritious option that complements many meals.
