2 cups flour
4 tablespoons cold, cubed butter
1 cup + 1 tablespoon buttermilk
1 1/ to eat 4 cups cheddar cheese, separated

1 teaspoon sugar

Instructions:
Preheat the oven to 220°C and prepare a baking tray lined with baking paper.
In a large bowl, combine flour, 1 cup Cheddar cheese, dried rosemary, garlic powder, baking powder, sugar, salt and pepper.
Stir in the butter until the mixture resembles coarse crumbs.
Gently stir in the buttermilk until a dough forms. Be careful not to mix too much.On a floured work surface, shape the dough into a circle about 2.5 cm thick and then cut it into cookies.Place cookies on a baking sheet, brush with buttermilk and top with remaining cheddar cheese.
Bake for 12-15 minutes until golden brown.
Allow to cool slightly before serving.
