Ingredients

  • 1 whole cooked rotisserie chicken, shredded
  • Cooking spray
  • 1 ½ cups water
  • ¼ cup butter
  • 1 package quick-cooking stuffing mix
  • 1 tbsp butter
  • 1 onion, diced
  • 3 stalks celery, diced
  • 1 can (10 oz) cream of chicken soup
  • 1 can (10 oz) cream of mushroom soup
  • 8 oz sour cream
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Set your oven to 375º F (190º C).
  2. Prepare Baking Dish: Spray a 9×13” baking dish with cooking spray.
  3. Cook Stuffing: Bring water and ¼ cup of butter to a boil in a saucepan, stir in stuffing mix, remove from heat, cover, and let sit for 5 minutes. Fluff with a fork.
  4. Cook Vegetables: In a skillet, melt 1 tbsp butter over medium heat, add onion and celery, and cook until softened (about 5-10 minutes).
  5. Prepare Soup Mixture: Combine sour cream, cream of chicken soup, and cream of mushroom soup in a saucepan over medium heat and stir until smooth.
  6. Assemble Casserole:
    • Spread the shredded chicken at the bottom of the baking dish.
    • Layer the onion and celery mixture over the chicken and season with salt and pepper.
    • Pour the soup mixture over the chicken and vegetables.
    • Top with the prepared stuffing mix.
  7. Bake: Bake in the preheated oven until the top is lightly browned and the casserole is bubbling (about 45 minutes).
  8. Rest: Allow the casserole to sit for 10 minutes before serving.
